Yes I know it was four days ago, but I am just now getting to posting. I was invited to a cookout and asked to bring some sort of dish to share. Of course I couldn’t pass up the opportunity to bake an America themed treat. 

I’ve been obsessed with cupcakes lately and have been wanting to try my hand at some sort of filled cupcake. What better way to show my American pride than by baking red velvet cupcakes, with white chocolate cream cheese filling, and blue cream cheese frosting! 

These things turned out beautifully! The cake was so moist. The filling, the perfect combination of white chocolate, cream cheese, and fluffiness. And you just can’t go wrong with cream cheese frosting. 

The cupcakes were a hit at the party. Everyone was raving about them and they were being gobbled up left and right. Feeling I had fulfilled my duty of providing an oh so American delight, I retired to the air conditioned indoors. And then tragedy struck.

I returned to porch area to find all of my cupcakes gone. I was delighted, I hadn’t thought they would be that much of a hit. Then I seemed to step in something squishy, and looking down found two cupcakes smashed into the porch floor, expected casualties at an outdoor party. I quickly ran to get some paper towels to clean up the mess, and went to throw them into a plastic bag I found on the floor, but instead inside the bag I found over half of my cupcakes.

How did this happen?! Who would do this?! Was it an accident? Sabotage? My sister immediately began interrogating people. No one was fessing up, or seemed to have seen anything. The only conclusion we could come to was that someone had tried one, been blown away by the scrumptiousness of it, and wanted to take the rest for themselves. It still remains a mystery.

Recipe:

Red Velvet Cake

You can’t go wrong with a  Paula Deen  recipe, and this is the exact on I used for the cupcakes. Once they are baked, take a paring knife and cute a cone shape into the middle of the cupcake. Trim the tip so there is room for the filling. 

White Chocolate Cream Cheese Filling

Adapted from Baking Bites Cream Cheese Frosting

Ingredients

  • 8 ounces cream cheese, room temp
  • 1/4 cup butter, room temp
  • 3-4 ounces white chocolate, melted and slightly cooled
  • 2 tsp vanilla extract
  • 4 tsp milk or cream (I used cream)
  • 2-4 cups confectioners sugar

In a large bowl, cream together cream cheese, butter, and white chocolate. Beat in vanilla and milk/cream. Using an electric mixer, add in confectioners sugar and beat until you reach desired consistency. I more or less whipped mine so it would be more of a light and fluffy filling. Fill a plastic baggy with some of the filling and trim off a fairly large hole (the filling should be pretty thick so you needn’t worry about it spilling out). Pipe filling into your hollowed cakes and replace top piece.

Cream Cheese Frosting

Ingredients

  • 8 ounces cream cheese, room temp
  • 4 tablespoons unsalted butter, room temp
  • 1/2 teaspoon vanilla extract
  • 1 1/2-3 cups confectioners sugar
  • Pinch of salt

Cream together cream cheese and butter. Beat in vanilla and salt. Gradually add in confectioners sugar until desired consistency is reached. Spoon frosting into pastry bag fitted with a star tip and frost away!

I’ve consumed and handled a lot of butter today. ~no regrets~

Not a bagel, but I guess it’ll do.

The South doesn’t have bagels. We had freezer bagels when I was in school, and that’s what was in the refrigerator when I visited. I just did a search for the area on google and the top bagel hit was a hotel’s free breakfast, the review was in Spanish. I don’t know how I survived there for four years, what did I eat?
